Face it – Americans love cake and make any excuse to eat it. Birthday parties, office get-togethers, or even intimate family BBQs … we will find the simplest of reasons to squeeze this delicious dessert onto the menu. With states gradually teetering between opening phases, however, you might not as get as many opportunities to eat cake these days. And, you should!
So, instead of making an entire cake for your household, consider making some sweet, bite-sized cake balls. Made with a mixture of cake box mix, white and semi-sweet chocolate chips, and plenty of sugar and sprinkles, this treat will satisfy your sweet tooth with the perfect amount of cake.
Ingredients:
• Cooking spray
• 1 box cake mix, plus ingredients called for on the box
• 3/4 cups (1 1/2 sticks butter), softened
• 3 cups powdered sugar
• 3 tablespoons heavy cream
• 1 teaspoon pure vanilla extract
• Pinch kosher salt
• 2 cups white chocolate chips
• 2 cups semi-sweet chocolate chips
• 4 tablespoon coconut oil, divided
• Sprinkles, for decorating
Directions:
1. Preheat oven to 350 degrees F and grease a 9” x 13” baking pan with cooking spray. Prepare cake mix according to box instructions and spreads evenly into prepared pan. Bake until a toothpick inserted into the center comes out clean, about 30 minutes. Let cool, then break the cake into small crumbs.
2. In a large bowl using a hand mixer beat butter until smooth, then add sugar and mix until evenly combined. Add cream, vanilla, and salt and user the hand mixer until it is all incorporated with one another.
3. Line a large baking sheet with parchment paper. Stir cake crumbs into the frosting, then form mixture into tablespoon-sized balls. Place on a prepared baking sheet and refrigerate until firm, 1 hour.
4. In a deep-sided heatproof bowl, microwave white chocolate and 2 tablespoons of coconut oil in 30-second intervals until melted. Repeat the same process with semisweet chocolate.
5. Dip chilled cake balls, shaking off excess chocolate. Immediately decorate with sprinkles and return to the baking sheet. Refrigerate until hardened, 15 minutes.
